Abstract5-羥甲基糠醛(5-HMF)是糖液受熱過程中糖的分解產物。提出了用高效液相色譜法測定蔗糖溶液中5-HMF的方法,并對制糖工業中的非純糖液,如清汁、糖漿及糖蜜等樣品進行了分析。研究結果表明,5-HMF測定的線性范圍為0~50mg/l,平均回收率為99.2%,最低檢測濃度為0.02mg/l。 5-Hydroxymethylfurfural (5 -HMF ) is a decomposition product of sugars, produced when sugar solution is heated. A HPLC method for the determination of 5-HMF in impure sugar solutions (thin juice, syrup or molasses) is proposed. The calibration curve for 5-HMF gives good linearity over the wide range of 0 50 mg/l. The average recovery of 5-HMF by the standard addition method is 99. 2 %. Limit of detection is 0. 02 mg/l.
